Ingredients
  1. Flour 1 1/4 cup
  2. Butter 1 stick (8 TBs)
  3. Ice water 1/4 cup
  4. Salt 1/2 tsp
Instructions
  1. Combine flour, salt, and butter with hands or food processor until it resembles coarse sand
  2. Add water and mix or process until a cohesive dough is formed
  3. Flatten slightly and place in a bag to refrigerate overnight or for several hours
  4. Remove dough from the refrigerator and roll out until it can fill and overcome the sides of your pie dish
  5. Bake in 400°F oven until lightly golden brown

Ingredients
  1. Sugar 2 cups
  2. Water 1/2 cup
  3. Butter 6 TBs
  4. Heavy (Whipping) Cream 1/2 cup
Instructions
  1. Cut 6 TBs of butter (3/4 of a stick) into tablespoon pats and reserve next to 1/2 a cup of heavy whipping cream
  2. Pour water and sugar into a pot and set heat to high
  3. Once the sugar is combined and molten, lower the heat to medium high and wait for the sugar to take on a copper color, tipping pot in a circular motion if obvious hotspots appear (a little smoke is alright toward the end), then take it off of the heat
  4. Quickly add butter piece by piece, whisking to combine (it will boil furiously)--do the same with the heavy whipping cream
  5. Reserve the now completed salted butter caramel

Ingredients
  1. Honeycrisp 3
  2. Granny Smith 2
  3. Lemon 1
  4. Sugar 3/4 cup
  5. Cinnamon stick 2
  6. Water
Instructions
  1. Prepare a Vac Snap bag with the juiced lemon, sugar, cinnamon sticks, and about a cup of water
  2. Core apples, quarter, then cut into thin slices and place into the prepared bag, adding water as necessary to keep the apples submerged
  3. Seal off bag with as little air as possible and refrigerate for several hours
  4. After the aforementioned resting period, remove the apples from the refrigerator and place them flattened onto a baking sheet and bake at 350°F until both sides achieve a light golden brown (flip each slice)
  5. Apples can be formed into roses*, arranged rustically, or configured into any pattern desirable
Notes
  1. To create apple roses, gather 5 slices (4 red and 1 green), and lay them on a flat surface one at a time such that each subsequent apple slice overlaps with half of the previous slice, lengthwise. Once this is accomplished, begin to roll the last apple from the end toward the first apple, rolling each successive apple slice along with it. Place completed roses next to each other to keep them from unfurling. Apple roses may be wrapped with plastic wrap and reserved until you are ready bake and serve the pie.

Pie Assembly:

1. Fill pie crust with about 1/4 inch of salted butter caramel (if it has hardened, warm it in the microwave for 10 second intervals until fluid again)

2. Arrange apples as desired

3. Warm in 350°F oven for about 20 minutes–cut and serve with ice cream
