Ingredients
  1. Half & Half 2 quarts
  2. Sugar 3 cups
  3. Large Egg Yolks 14
  4. Vanilla beans 3 pods
  5. Salt Heavy pinch
  6. Grapefruit zest 1/2 zested
  7. Cinnamon sticks 2
  8. Nutmeg 1/2 tsp
  9. Brandy 5 shots
  10. Bourbon 2 shot
  11. Dark Rum 1 shot
Instructions
  1. Fill SmartHub with water and set temperature to 185°F.
  2. Split the vanilla beans lengthwise and add half & half, sugar, salt, nutmeg, grapefruit zest, cinnamon sticks, and egg yolks to a vac-snap bag—seal and shake to combine, then add to the preheated SmartHub for 1 hour.
  3. Remove bag and refrigerator overnight, or until cool to the touch.
  4. Add alcohol (if desired) and serve
